Léandre Vivier is more than a chef pâtissier, he is a true artist and magician. Particularly inspired, this year he created a bûche de Noël (Christmas log) that will delight your eyes as much as your taste buds. An elegant, stylised fir branch, it combines sweet and tangy flavours with foamy and crunchy textures to bring about a perfect balance. The spirit of the Burgundy
Beautifully designed and elegant, the Hôtel Le Burgundy is a showcase for the works of the artist Guy de Rougemont, a member of the Académie des Beaux-Arts. His sculpture which occupies the space under the Burgundy glass roof particularly inspired Léandre Vivier, our chef pâtissier, in creating his bûche de Noël. Taking up the sculpture’s generous and aesthetic curves, he imagined a dessert evoking the supple shapes of a stylised fir branch. Delicate and appealing, the bûche combines warm orange tones with a dusting of immaculate white, representing snow.
A subtle and delicious combination
To compose his festive dessert, Léandre Vivier combined a gourmet almond biscuit with a marmalade of candied yuzu peel, lime and lemon caviar. Generously coated with a propolis foam, it combines notes of honey and beeswax with the freshness of citrus fruits and the deliciousness of almonds, in a perfect balance. Of course, each of the ingredients has been carefully sourced. The citrus fruits come from the renowned Damien Blasco farm in Occitanie and the honey from an apiary in the Ile-de-France. Available on the menu of the restaurant Le Baudelaire, Léandre Vivier's bûche can also be ordered online and collected from the reception of the Hotel Le Burgundy from December 18th.
